* 2011 Sauvignon Blanc
     NEW RELEASE!                                       $25
A lighter finer wine this year courtesy of the late cold autumn in Orange Region, this fruit is !00% cold climate Sauvignon Blanc from vineyards at 1000m. elevation. Because of this, the bouquet’s varietal character is reminiscent of nettles and cut grass. The palate shows a very fresh light dry taste of fresh lychees and soft ‘citrus’ style acid finish.

The wine has an attractive mid yellow colour developed from its time in 2 year old French oak barrels. The aroma of apricot jam with a touch of pear blossom greets the nose initially with a hint of oak becoming evident with time in the glass. The typical apricot and peach varietal flavours linger on a warm soft palate with subtle oak supporting a slightly viscous mouthfeel. This rich creamy sensation will develop further with up to 5 years age in the bottle.

A multi-layered palate of plum overtones and dark berry flavours of blackberry and black currants, structured with firm but smooth tannins to the back of the palate, and finishing with a lingering sweetness.Sourced from 40 year old vines, the Shiraz was aged in a mix of new and 2nd use French and American oak for 16 months, likewise the Cabernet aged in 2nd and 3rd use French oak for 18 months.
